Honey Walnut Date Bites

I have enjoyed baking and concocting recipes with Savannah Bee Honey’s various flavors of honey. In this particular video, I used Tupelo Honey. It’s very sweet and tastes kind of like toffee which made it a perfect candidate for my Honey Walnut Date Bites. Tupelo Honey also is one of the most rarest honey on the planet! For you honey people out there, this is one honey you gotta try.

These Honey Walnut Date Bites are the perfect snack for work, home or wherever you may be. It curbs your appetite so when you start getting a little “hangry” before dinner. Yes, I know exactly how you feel :).

Honey Walnut Date Delights

Honey Walnut Date Delights

Ingredients:
2 Cups Walnuts
1 Cup Shredded, Unsweetened Coconut
2 Cups Dates, Pitted
2 Tbsp Coconut Oil
1 tsp Salt
1 tsp Vanilla Extract
1 Tbsp Savannah Bee Honey’s Tupelo Honey
Preparation:
Add walnuts and shredded coconut in blender/food processor. Blend until well mixed together. Add coconut, dates, salt, vanilla extract and Savannah Bee Honey’s Tupelo Honey. Blend until evenly distributed. Mold into circular balls. Place in fridge if you wish.
No Bake Honey Chocolate Clusters

I began making these no bake honey chocolate clusters when I lived in Chile. I missed my dad’s no bake cookies. I love the taste of peanut butter, chocolate and vanilla, but I knew no bake cookies are not the best for you. So, instead I invented these honey chocolate clusters. I was addicted.

You still get the sweet chocolaty taste, but you don’t feel bad when you eat five. The coconut adds an even more unique taste, making these clusters taste just a bit like an almond joy. These healthy treats are a great snack that will empower you with energy when you need it most. The best part is, they are fast and easy to make!

One concern is that these cookie like goodnesses don’t set up. I solve that problem by throwing them in the freezer. I don’t know about your freezer, but mine chills them perfectly.

I especially like making this video, because my sister was able to co-star along side me.

Ingredients:

1 cup almond milk

4 Tbsp cocoa powder

1/2 cup honey

2 cups oats

1 cup coconut flakes

1/2 cup peanut butter

1 tsp vanilla

Preparation:

Put the almond milk, cocoa powder and honey in a pot. Stir and boil for one minute. You know it’s boiling, when it bubbles as you are stirring.

Take pot off stove and add in oats, coconut, peanut butter and vanilla. Stir well.

Place mix into small balls onto tin foil. Let sit until cool or place in freezer to set.

 

Garlic Mashed Cauliflower

Garlic mashed cauliflower is delicious. There isn’t more to say. The touch of honey and olive oil balance out the strong garlic flavor to make this a winner on any table. Even though Ky loves potatoes, Maggie has never been the biggest fan. This is where we can both compromise on an even more delectable level.

But be warned, this portion will not feed a whole family. Definitely double the recipe if you want to feed the kids as well.

The best part about this cauliflower recipe is that there is no starch residue.

Yummy garlic mashed cauliflower

 

Time: 15 minutes

Ingredients:

1 steamed head of cauliflower

1/2 cup cottage cheese

1/2 cup parmesan cheese

1/2 tsp garlic powder

1/2 tsp salt

1/8 tsp pepper

Preparation:

Add all ingredients in a medium sized bowl. Mix well. Enjoy!

 

Chocolate Peanut Butter Smoothie

We make this chocolate peanut butter smoothie every night before we go to bed. Especially while we’re watching a movie. They’re fast ‘n easy and very delicious. Maggie used to work at Jamba Juice and make lots of chocolate peanut butter smoothies. But these are more delicious and 100% more nutritious.

A key ingredient is the vanilla. It helps the chocolate peanut butter smoothie tastes just as good as any ice cream treat. Whenever we crave ice cream or frozen yogurt, we turn to our special blended goodness.

Chocolate Peanut Butter Smoothies

Time: 5 minutes

Ingredients:

1/2 cup almond milk

1 banana

1 Tbsp peanut butter

1 Tbsp chocolate powder

Pinch of salt

Cinnamon, sprinkle

Honey, desired amount

Ice from 1 tray

Preparation:

Put all ingredients in blender and blend baby blend.

 

Healthy Pumpkin Chocolate Chip Cookies

These healthy pumpkin chocolate chip cookies were a hit in our family. They are so guilt-free that you don’t feel bad when you eat another one (because you will). We think the real winner here is the pumpkin. Pumpkin and honey were made to go with each other.

If you wanted to make unhealthy cookies, you can just use a normal homemade cookie recipe and just add in the pumpkin. But if you are like Maggie, you healthify everything so you can eat more of it.

In the recipe, we use whole oats and grinded oats. This way some of the oats becomes like flour and makes the cookie more springy. We even added in some almond flour, giving these cookies a nutty taste without actual nuts getting in the way. the peanut butter is our fat ingredient and adds to the moistness of these breakfast bars. We use just the right amount so as to not over power the pumpkin taste.

Pumpkin Chocolate-Chip Cookie

Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

3/4 cup whole oats

1/4 cup oat flour (you can just grind up whole oats in a blender)

1/4 cup almond flour

1/4 cup honey

3 tbsp chocolate

1/4 tsp cinnamon

1/4 tsp salt

1/4 tsp baking soda

1/3 cup canned pumpkin

2 Tbsp almond milk

1.5 Tbsp peanut butter

1 tsp vanilla

Preparation:

Preheat oven to 350 degrees

Add in all dry ingredients, including spices.

Add in chocolate, almond milk, honey peanut butter and vanilla.

Cook in preheated oven for 10 minutes.

 

 

 

Ham Avocado Panini

We sometimes go through food obsessions. This week it was this ham avocado panini sensation. We cracked open our George-Foreman Grill and discovered our love for paninis. If you don’t have a panini grill, no fear. You can easily use a normal pan and then use a spatula to flip it over. Our banana peanut butter sandwich is also delicious paninified. 🙂

This ham avocado panini became our personal favorite. The crowning jewels in this yummy sandwich are the avocado, cheese, and cucumbers. Those three items go perfectly together. Ky has been really busy studying for the MCAT, so we have been enjoying lots of fast, easy, and delicious sandwiches.

Ham Avocado Panini

Time: 10 minutes

Ingredients:

Ham, 1 slice

Avocado, mashed and salted

Cheese,

Honey,

Tomatoes, sliced

Cucumbers, sliced

Preparation:

Put avocado and honey on separate bread pieces. Place all other items on bread. For best results, grill/panini sandwich to melt the cheese and toast the bread. Enjoy!

 

 

Apple Chicken Cucumber Salad with Honey Mustard Dressing

I love salad. I try to eat it once a day. Twice a day if I’m lucky. 🙂 Salads are not only super healthy, but also incredibly cheap. A head of lettuce is like a dollar at the store. Awesome. And the sunflower seeds, raisins and cucumber were all under a dollar individually. Why are salads usually so expensive at restaurants? I never have quite figured that one out yet. This way you get a way more salad for a quarter of the price.

Apple Chicken Cucumber Salad

I like to mix and match different food items together, I mean that’s what a salad is, right? Just throw in the stuff you have lying around the house. But this Apple Chicken Cucumber Salad with Honey Mustard Dressing is one of my favorites. It has sweet aspects from the apples, raisins and honey, and spicy aspects from the mustard and spices. And then the chicken and sunflower seeds really kick out the flavor. And what I think brings it all together? The chopped boiled eggs. They’re the bridge between the dressing and the salad. You would’ve never thought these ingredients would go so well together, but they do!

Usually the most unhealthy part of a salad is the dressing. But this dressing is non-fat and only sweetened with a little bit of honey. Cha-ching! Now you finally have an excuse to eat like a pig. I saved a little portion for Ky, but I essentially ate it all when I turned off the camera. It’s just too delicious. I guess I just found my excuse. 😉

Chicken Salad 4

Prep Time: 20 minutes

Salad Ingredients:

1 lettuce head

1/2 cup cucumber

1 apple, chopped

1 grilled chicken, chopped

1/2 cup sunflower seeds

1/2 cut raisins

2 boiled eggs, chopped

Dressing Ingredients:

1/2 cup Greek yogurt

2 Tbsp yellow mustard

3 Tbsp honey

1/2 tsp pepper

1/2 tsp salt

1 Tbsp lemon juice

Preparation:

Put all salad ingredients into a large bowl. Mix the dressing ingredients well. Chill the dressing ingredients if you desire before pouring onto salad.

2-Ingredient Banana Egg Pancakes

Are you craving pancakes but don’t want the carbs? Well, these banana egg pancakes are the ones for you. They’re the easiest pancakes in the world to make. All you need are two ingredients: banana and eggs. Of course I add in extra spices to make these pancakes extra special such as cinnamon, vanilla and honey.

The tricky part is flipping the pancakes once they’re on the grill. I admit the first time I made these, I couldn’t do it. My banana egg pancakes turned out to be a banana egg scramble instead. The secret is to pour out small portions and use a very thin spatula. In the video I used a pancake grill, but I would say a normal pan would work even better because you can grab and maneuver the pan for a better flip. It’s very possible that some batter will drip in the process. All you gotta do is flip the pancake on top of the droppings. No harm done.

I made these for Ky and he loved them. You don’t even need syrup; they already taste like candy. The only problem is I eat the banana egg pancakes too fast. It took all of my self control to save some for Ky. But since I already ate the entire two other batches from before, I resisted the urge. Moral of the story: plan to make lots.

Ingredients:

1 Banana

2 Eggs

Cinnamon (desired amount)

Vanilla (desired amount)

Honey (desired amount)

Preparation:

Mash up bananas and eggs. Mix very well. Add in desired amounts of cinnamon, vanilla and honey. Pour small amounts onto pan. Wait until bubble and gently flip the pancakes. Enjoy!
